Peanut Butter Chocolate Chip Bread (Gluten Free)
1 cup (smooth no-stir peanut butter
1 1/4 cups milk
2/3 cup granulated sugar
1 teaspoon kosher salt
2 teaspoons baking powder
2 teaspoon baking soda
1 1/2 cups of flour (I used Otto’s Cassava Flour)
To make the bread…
Preheat oven to 325°F. Grease a 9-inch x 5-inch loaf pan and set it aside. Microwave peanut butter for 30 seconds. Add to bowl and whisk. Mix in the milk, eggs, sugar, salt, baking powder, and baking soda. Mix together and then add flour. Mix in chocolate chips. Use as many as you see fit. I threw in about two handfuls worth. Add batter to pan and place additional chocolate chips on top as you like. Back for 1 hour, turning half way through. Let it cool for 15 minutes and enjoy!
